Preparing the Salmon

    Marinating the Salmon

    In a shallow dish, combine olive oil, salt, and black pepper. Add the salmon fillets and coat them well with the marinade. Allow to marinate for 15-20 minutes at room temperature.

    Grilling the Salmon

    Preheat your grill to medium-high heat. Once hot, place the marinated salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on each side or until the salmon flakes easily with a fork.

Cooking the Vegetables

    Preparing the Vegetables

    While the salmon is grilling, wash and trim the asparagus. Cut the bell peppers into strips and slice the carrots into thin rounds.

    Grilling the Vegetables

    In a grill basket or on a sheet of aluminum foil, toss the prepared vegetables with a splash of olive oil, salt, and pepper. Grill alongside the salmon for about 5-7 minutes, stirring occasionally, until tender.

Making the Lemon Butter Sauce

    Melting the Butter

    In a small saucepan over low heat, melt the unsalted butter. Do not let it brown.

    Once melted, remove from heat and stir in the fresh lemon juice, minced garlic, and chopped parsley. Mix until well combined and keep warm.

    Once the salmon and vegetables are cooked, place a salmon fillet on each plate, add a generous portion of grilled vegetables, and drizzle with the lemon butter sauce. Serve immediately.
