    Prepare the Potatoes

    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Peel the potatoes and cut them into even-sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potato sticks in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Cooking

    Heat the Oil

    In a deep fryer or a large, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the right temperature for frying.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel. This step is crucial to prevent oil splatter during frying.

    Fry the Potatoes

    Carefully add a handful of the dried potato sticks to the hot oil, making sure not to overcrowd the pot. Fry in batches for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and let them drain on paper towels.

    While the fries are still hot, sprinkle them with salt, garlic powder, paprika, and black pepper to taste. Toss gently to coat the fries evenly.
