Method

Filet Mignon Preparation

    Season the Steak

    Sprinkle both sides of the filet mignon with salt and black pepper, ensuring an even coating.

    Sear the Steak

    In a skillet, heat the olive oil over medium-high heat. Once hot, add the filet mignon and sear for 3-4 minutes on each side for medium-rare, or until desired doneness.

    Add Butter

    In the last minute of cooking, add the butter to the skillet and baste the steak with the melted butter for added flavor.

    Rest the Steak

    Remove the filet mignon from the skillet and let it rest for at least 5 minutes before slicing.

Marsala Sauce Preparation

    Sauté Shallots and Garlic

    In the same skillet used for the steak, add the chopped shallots and minced garlic. Sauté for 2-3 minutes over medium heat until softened.

    Cook the Mushrooms

    Add the foraged mushrooms to the skillet and cook for another 3-4 minutes until they are browned and tender.

    Add Marsala Wine

    Pour in the Marsala wine and scrape up any browned bits from the bottom of the skillet. Bring to a simmer and reduce by half, about 5 minutes.

    Finish the Sauce

    Add the chicken or beef broth and thyme. Continue to simmer for another 5 minutes until the sauce thickens slightly. Stir in the heavy cream.

    Serve

    Slice the rested filet mignon and serve it topped with the rich marsala sauce.
