Method
Cake Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C).
- 2
Melt Chocolate and Butter
In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- 3
Mix Eggs and Sugar
In a separate bowl, whisk together the large eggs, large egg yolks, and granulated sugar until the mixture is pale and slightly thickened.
- 4
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously to prevent the eggs from cooking.
- 5
Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate mixture, then add the vanilla extract. Gently fold until just combined.
- 6
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 8
Bake
Bake in the preheated oven for about 12-14 minutes, until the edges are firm but the center is still soft.
- 9
Cool Slightly
Remove from the oven and let the cakes cool in the ramekins for about 1 minute.
- 10
Invert and Serve
Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on top.
