Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water. Remove the outer skin and cut the bodies into rings. If using whole calamari, make sure to separate the tentacles and bodies.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Soak in Buttermilk
Place the calamari rings and tentacles into a bowl and pour the buttermilk over them. Let them soak for at least 30 minutes to tenderize.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture until well coated.

Fry the Calamari
Carefully place the breaded calamari into the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer and reduce the heat to low. Let it cook for about 15-20 minutes, stirring occasionally until it thickens.

Adjust Seasoning
Taste the sauce and adjust seasoning if necessary. Remove from heat and keep warm.
