Preparation of Porkchops

    Season the Porkchops

    Pat the Berkshire pork chops dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Porkchops

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the pork chops to the skillet and sear for about 4-5 minutes on each side, or until they develop a golden-brown crust. The internal temperature should reach 145°F (63°C). Remove the pork chops from the skillet and let them rest.

Preparation of Vinegar Peppers & Onions

    Cook the Vegetables

    In the same skillet, add 1 tablespoon of olive oil if needed. Add the sliced bell peppers and chopped onion to the skillet. Sauté for about 5 minutes until the vegetables are soft.

    Add Flavorings

    Mince the garlic and add it to the skillet along with the dried oregano. Stir and cook for another 1-2 minutes until fragrant.

    Add Vinegar

    Pour in the apple cider vinegar and stir to combine. Allow the mixture to simmer for about 3-4 minutes until the vinegar reduces slightly. Season with salt and black pepper to taste.
