Preparation
- 1
Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper to taste. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Remove from grill and let it rest for 5 minutes before slicing into bite-sized pieces.
- 2
Prepare the Base
In a large serving tray, layer the mixed greens evenly across the bottom to create a base for the BBQ chicken.
- 3
Add Chicken and Toppings
Evenly distribute the sliced grilled chicken over the mixed greens. Then top with crispy cheddar onions, diced tomatoes, corn, and black beans.
- 4
Drizzle with Sauces
Carefully drizzle BBQ sauce over the entire tray, ensuring even coverage. Follow up by drizzling chipotle ranch dressing over the top for an extra kick.
