Add the mushrooms and peppers, and sauté until the mushrooms are soft and the peppers are tender, about 5 additional minutes. Season with salt and black pepper to taste.

Lay the slices of white American cheese over the beef and vegetable mixture. Cover the skillet with a lid and let it sit for 2-3 minutes, or until the cheese is melted.
