Method

Cooking the Rice

    Prepare the Rice

    In a medium saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce heat to low, cover, and let it simmer for 18-20 minutes or until the rice is tender and the water is absorbed.

    Fluff the Rice

    Remove from heat, let it sit covered for 5 minutes, then fluff with a fork.

Preparing the Protein and Vegetables

    Cook the Chicken (if using)

    If you choose grilled chicken, grill it until fully cooked (about 6-7 minutes per side) and then slice into strips.

    Prepare the Beans

    If using black beans, drain and rinse them under cold water.

    Sauté the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add diced bell pepper and corn, and sauté for about 5-7 minutes until tender.

Seasoning and Combining

    Add salt, black pepper, cumin, and chili powder to the skillet with the vegetables. Stir well to combine and cook for an additional 2 minutes.

    Combine Ingredients

    In a large bowl, combine the cooked rice, seasoned vegetables, and your choice of protein (grilled chicken or black beans). Mix well.

Serving

    Plate the Dish

    Spoon the mixture onto plates or into bowls.

    Top with a tablespoon of sour cream, chopped cilantro, and a sprinkle of shredded cheese.
