Dice the onion and set aside. If using grilled chicken, ensure it's cooked and shredded. If using ground beef, cook it thoroughly and drain any excess fat.
2. Warm the Tortillas
In a skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until they are pliable. Set aside.

On each flour tortilla, spread 1/2 cup of cooked rice, followed by 1/4 cup of refried beans. Add the diced onions and your choice of grilled chicken or ground beef.
4. Add Toppings
Top the layered ingredients with 1/4 cup of sour cream, followed by 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded lettuce.
5. Sauce Selection
Drizzle your choice of red chile sauce, green chile with pork sauce, or vegetarian green chile sauce over the top of each tortilla.
