    Cook the Ground Beef

    In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Drain any excess fat.

    Season the Mixture

    Add the taco seasoning, diced tomatoes, corn, black olives, and green chiles to the skillet with the beef. Stir to combine and cook for an additional 5 minutes, allowing the flavors to meld.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Layer the Lasagna

    In a 9x13 inch baking dish, spread a thin layer of the beef mixture on the bottom. Place 2 flour tortillas on top, followed by another layer of the beef mixture. Sprinkle some jack and cheddar cheese over it. Repeat the layers, finishing with a final layer of tortillas topped with the remaining beef mixture and cheese.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.

    Let the Mexican lasagna cool for a few minutes before slicing. Serve with garlic toast on the side.
