Method

Prepare the Steak

    Marinate the Steak

    In a bowl, combine olive oil, garlic powder, cumin, chili powder, salt, and black pepper. Add the flank steak, ensuring it is well coated. Cover and let it marinate in the fridge for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Steak

    Heat a skillet over high heat. Once hot, add the marinated flank steak. Cook for about 4-5 minutes on each side for medium-rare, or longer based on your desired doneness. Remove from skillet and let it rest for 5 minutes before slicing thinly against the grain.

Sauté the Vegetables

    Prepare the Vegetables

    While the steak is cooking, slice the green and red bell peppers and the onion into thin strips.

    Sauté the Vegetables

    In the same skillet used for the steak, add a little more olive oil if needed. Add the sliced vegetables and sauté over medium-high heat for about 5-7 minutes, or until they are tender and slightly caramelized. Season with salt and black pepper to taste.

Serve the Fajitas

    Warm the Tortillas

    In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side, or until they are pliable.

    Assemble the Fajitas

    To assemble, place a few slices of steak and sautéed vegetables onto a warmed tortilla. Top with guacamole, sour cream, shredded jack cheese, and pico de gallo. Roll the tortilla around the filling and serve immediately.
