Method

Marinate the Steak

    Prepare the Marinade

    In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Mix well.

    Marinate the Steak

    Place the flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours.

Cook the Vegetables

    Prepare the Vegetables

    Slice the green bell pepper and onion into thin strips.

    Sauté the Vegetables

    In a skillet over medium heat, add a little olive oil and sauté the sliced bell pepper and onion until they are tender, about 5-7 minutes. Remove from heat and set aside.

Cook the Steak

    Grill or Sear the Steak

    Remove the steak from the marinade and discard the marinade. Grill or sear the steak over medium-high heat for about 4-5 minutes per side, or until it reaches your desired doneness.

    Let the steak rest for 5 minutes, then slice it against the grain into thin strips.

Assemble the Burritos

    Warm the flour tortillas in a microwave or skillet until pliable.

    On each tortilla, layer the sliced steak, sautéed vegetables, jack cheese, and a dollop of sour cream. Roll the tortilla tightly to enclose the filling.
