    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onion, diced carrot, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic and Spices

    Stir in the minced garlic, ground cumin, ground coriander, and red pepper flakes. Cook for an additional 1-2 minutes until fragrant.

    Combine the Split Peas

    Add the rinsed split peas to the pot, stirring to combine with the sautéed vegetables.

    Add Broth and Seasonings

    Pour in the vegetable broth, add the bay leaf, and season with salt and black pepper. Bring to a boil.

    Simmer the Soup

    Reduce the heat to low, cover, and let the soup simmer for about 30-40 minutes, or until the split peas are tender.

    Adjust Seasoning

    Taste the soup and adjust seasoning as needed. Remove the bay leaf before serving.
