Preparation

    Prepare the Ingredients

    Peel and devein the shrimp if not already done. Slice the green and red bell peppers and the onion into thin strips. Mince the garlic.

    Season the Shrimp

    In a bowl, combine the shrimp with olive oil, minced garlic, ground cumin, chili powder, salt, and black pepper. Toss until the shrimp are well coated. Set aside to marinate for about 15-20 minutes.

Cooking

    Sauté the Vegetables

    In a large skillet over medium-high heat, add a tablespoon of olive oil. Once hot, add the sliced onions and bell peppers. Sauté for about 5-7 minutes until they are tender and slightly charred. Remove them from the skillet and set aside.

    Cook the Shrimp

    In the same skillet, add another tablespoon of olive oil. Add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque.

    Combine and Serve

    Add the sautéed vegetables back to the skillet with the shrimp, stirring to combine. Cook for an additional minute to heat through. Serve immediately on a sizzling platter.

    Prepare the Toppings

    While the shrimp and vegetables are cooking, prepare the toppings: place guacamole, sour cream, shredded jack cheese, and pico de gallo in small bowls.

    Warm the Tortillas

    Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until soft and pliable.

    Assemble the Fajitas

    To serve, place some of the shrimp and vegetable mixture onto a warm tortilla, and add desired toppings. Roll up and enjoy!
