Filling Preparation

    Cook the Beef Mixture

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

    Add Vegetables

    Add the chopped onion, minced garlic, and diced green bell pepper to the skillet. Cook for another 5 minutes, stirring occasionally until the vegetables are softened.

    Stir in the cumin, paprika, salt, and black pepper. Mix well and cook for an additional 2 minutes.

    Finish Filling

    Remove from heat and stir in the shredded cheddar cheese until melted. Set aside.

    While the filling is cooling, preheat your oven to 375°F (190°C). Cut the tops off the poblano peppers and remove the seeds. Stuff the peppers with the beef mixture.
