Preparation

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Break it into small pieces while cooking.

    Prepare the Vegetables

    While the chorizo is cooking, finely chop the garlic, green onion (reserve some for garnish), and jalapeño pepper.

    Combine Ingredients

    Once the chorizo is cooked, add the chopped garlic and jalapeño to the skillet and sauté for another 2-3 minutes until fragrant.

    Mix the Cheese

    In a large bowl, combine the Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix well until there are no lumps.

Cooking

    Melt the Cheese

    Add the cooked chorizo mixture to the cheese mixture and stir until well combined. Transfer this mixture to an oven-safe dish.

    Bake

    Place the dish in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until the cheese is melted and bubbly.

    Garnish

    Once done, remove from the oven and sprinkle the reserved green onions on top for garnish.

    Serve the melted cheese dip hot with tortilla chips for dipping.
