Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C) to prepare for baking the casserole.

    Cook the Protein

    In a skillet, cook your choice of chorizo, grilled chicken, or ground beef over medium heat until fully cooked. Drain excess fat if necessary and set aside.

    Boil the Potatoes

    In a large pot, bring water to a boil. Add the diced potatoes and cook until fork-tender, about 10-15 minutes. Drain and set aside.

Making the Cheese Sauce

    Melt the Butter

    In a saucepan over medium heat, melt the butter until bubbly.

    Add Flour

    Whisk in the flour and stir for about 2 minutes until it forms a roux, without browning.

    Add Milk and Seasonings

    Slowly pour in the milk while continuing to whisk to avoid lumps. Add salt, black pepper, and garlic powder. Cook until the sauce thickens, about 5-7 minutes.

    Add Cheese

    Remove the saucepan from heat and stir in the shredded cheese until melted and smooth.

Assembling the Casserole

    Combine Ingredients

    In a large mixing bowl, combine the cooked potatoes, cooked protein, and cheese sauce. Mix until well combined.

    Transfer to Baking Dish

    Pour the mixture into a greased baking dish, spreading it evenly.

    Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
