Prepare the Dough
In a large bowl, mix the flour, salt, and baking powder together.

Add Wet Ingredients
Gradually add the warm water and olive oil to the flour mixture, stirring until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Cook the Meats
In a large skillet over medium heat, add the ground beef and chorizo sausage. Cook until browned, about 8-10 minutes.

Cool the Filling
Remove the skillet from heat and let the filling cool slightly before using.
For the Green Pork Chile

Prepare the Chile
In a large pot, combine the diced pork shoulder, chopped tomatillos, jalapeño, quartered onion, whole garlic cloves, chicken broth, and salt.

Cook the Chile
Bring the mixture to a boil, then reduce heat and simmer for about 1.5 to 2 hours, until the pork is tender.

Blend the Chile
Once cooked, use an immersion blender to puree the sauce until smooth. Adjust seasoning to taste.
Assemble the Ponchitos

Shape the Dough
Divide the rested dough into 8 equal pieces. Roll each piece into a circle about 6 inches in diameter.

Add Filling
Place a generous spoonful of the meat filling in the center of each dough circle.

Seal the Ponchitos
Fold the dough over the filling to create a half-moon shape. Press the edges to seal tightly.

Cook the Ponchitos
Heat a dry skillet over medium heat. Cook each ponchito for about 3-4 minutes on each side until golden brown.

Serve the warm ponchitos topped with the green pork chile.
