Method

Preparation of Filling

  1. 1

    Cook the Beef

In a skillet over medium heat, add the olive oil. Once hot, add the ground beef, salt, and black pepper. Cook until the beef is browned and cooked through, about 7-10 minutes.

  2. 2

    Prepare the Refried Beans

In a separate saucepan, heat the refried beans over low heat until warmed through, stirring occasionally.

  3. 3

    Add Jalapeños

Once the beef is cooked, add the jalapeños to the skillet and mix well. Cook for an additional 2 minutes to allow the flavors to combine.

Assembling Nacho Wheels

  1. 4

    Fill the Shells

Take each corn tostada shell and fill it with a layer of refried beans followed by the beef and jalapeño mixture. Top with a generous amount of cheese.

  2. 5

    Melt the Cheese

Place the filled tostada shells on a baking sheet and place under the broiler for 2-3 minutes or until the cheese is melted and bubbly. Keep a close eye to avoid burning.

Serving

  1. 6

    Garnish and Serve

Once the cheese is melted, remove from the oven. Top with sour cream, chopped cilantro, sliced black olives, and sliced green onions. Serve immediately.
