Salad Preparation
- 1
Prepare Greens
Rinse the romaine lettuce and spinach under cold water. Pat dry with a clean kitchen towel or use a salad spinner to remove excess water.
- 2
Chop Vegetables
Chop the romaine lettuce and spinach into bite-sized pieces and place in a large salad bowl.
- 3
Add Cherry Tomatoes
Halve the cherry tomatoes and add them to the salad bowl.
- 4
Slice Red Onion
Thinly slice the red onion and add it to the salad bowl.
- 5
Prepare Green Beans
Blanch the green beans in boiling water for 3-4 minutes, then quickly transfer them to an ice bath to stop the cooking process. Drain and add to the salad bowl.
- 6
Add Croutons
Top the salad with croutons for added crunch and texture.
Dressing Preparation
- 7
Mix Dressing Ingredients
In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, honey, salt, and black pepper until well combined.
- 8
Dress the Salad
Drizzle the dressing over the salad just before serving, and toss gently to combine everything evenly.
