Each individually boxed Combination Plate meal comes with Rice & Refried Beans, Chips, 4 oz salsa. Select from the following Combination Plate choices: 1 Cheese Enchilada & 1 Soft Shell Taco, 1 Chicken Enchilada & 1 Soft Shell Taco, 1 Beef Enchilada & 1 Soft Shell Taco, 1 Chicken & Cream Cheese Enchilada & 1 Soft Shell Taco, 1 Chile Relleno & 1 Soft Shell Taco, 1 Chicken Enchilada & 1 Beef Enchilada, 2 Beef Enchiladas, 2 Chicken Enchiladas, 2 Chicken & Cream Cheese Enchiladas, 1 Bean Burrito & 1 Soft Shell Taco, 1 Bean Burrito & 1 Cheese Enchilada.

In a medium saucepan, combine 1 cup of white rice, 2 cups of water, 1 tablespoon of olive oil, and 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until rice is tender and water is absorbed.

Cook the Rice

In a small saucepan, heat 1 cup of refried beans over low heat, stirring occasionally until warmed through.

Serve 2 cups of tortilla chips in a small bowl or on a plate as an accompaniment.

Prepare the Chips

Measure out 4 oz of salsa and place it in a small container for serving alongside the meal.

Serve the Salsa

Preheat the oven to 350°F (175°C). For each enchilada, take a corn tortilla and fill it with shredded cheese and either shredded chicken, ground beef, or a mixture of both. Roll the tortilla tightly and place it in a baking dish. Repeat for the desired number of enchiladas.

Prepare the Enchiladas

For each taco, take a corn tortilla and fill it with your choice of shredded chicken, ground beef, or black beans. Add toppings as desired, such as shredded cheese or diced poblano peppers.

Make the Tacos

Once all enchiladas are in the baking dish, cover with additional cheese if desired and bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
