Rice & Refried Beans

    Cook the Rice

    In a medium saucepan, combine 1 cup of white rice, 2 cups of water, 1 tablespoon of olive oil, and 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until rice is tender and water is absorbed.

    Heat the Refried Beans

    In a small saucepan, heat 1 cup of refried beans over low heat, stirring occasionally until warmed through.

Chips

    Prepare the Chips

    Serve 2 cups of tortilla chips in a small bowl or on a plate as an accompaniment.

Salsa

    Serve the Salsa

    Measure out 4 oz of salsa and place it in a small container for serving alongside the meal.

Enchiladas & Tacos

    Prepare the Enchiladas

    Preheat the oven to 350°F (175°C). For each enchilada, take a corn tortilla and fill it with shredded cheese and either shredded chicken, ground beef, or a mixture of both. Roll the tortilla tightly and place it in a baking dish. Repeat for the desired number of enchiladas.

    Make the Tacos

    For each taco, take a corn tortilla and fill it with your choice of shredded chicken, ground beef, or black beans. Add toppings as desired, such as shredded cheese or diced poblano peppers.

    Bake the Enchiladas

    Once all enchiladas are in the baking dish, cover with additional cheese if desired and bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
