    Rinse the Rice

    Place the long-grain white rice in a fine mesh strainer and rinse under cold water until the water runs clear. This helps remove excess starch.

    Soak the Rice

    In a large bowl, combine the rinsed rice, water, and cinnamon stick. Cover and let it soak at room temperature for at least 3 hours, or preferably overnight for better flavor.

Blending

    Blend the Mixture

    After soaking, remove the cinnamon stick. Transfer the rice and water mixture to a blender. Blend on high speed until the rice is broken down and the mixture appears milky, about 1-2 minutes.

    Strain the Mixture

    Pour the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher. Use a spatula to press down on the solids to extract as much liquid as possible. Discard the solids.

Final Steps

    Add Flavorings

    To the strained liquid, stir in the vanilla extract, sugar, milk, and ground cinnamon. Mix until the sugar is fully dissolved.

    Serve

    Serve the horchata over ice in glasses. Optionally, sprinkle with additional cinnamon powder for garnish.
