    Roast the Chiles

    Preheat your oven to 450°F (232°C). Place the fresh green chiles on a baking sheet and roast them for about 15-20 minutes, turning them occasionally, until the skin is blistered and charred.

    Prepare the Vegetables

    While the chiles are roasting, dice the onion and chop the garlic and tomatoes. Set aside.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then add the chopped garlic and cook for another minute until fragrant.

    Add the Vegetables

    Once the onion and garlic are ready, remove the roasted green chiles from the oven, let them cool slightly, then peel off the charred skin and chop them. Add the chopped chiles and tomatoes to the pot, stirring to combine.

    Season and Simmer

    Add the ground cumin, salt, and black pepper to the pot. Pour in the vegetable broth, stirring to combine all ingredients. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.

    After simmering, taste and adjust seasoning if necessary. Serve the green chile warm as a side dish or over rice.
