Enchilada Filling

For Assembling

Method

Prepare Enchilada Filling

  1. 1

    Combine Ingredients

In a large bowl, mix the shredded chicken, refried beans, chopped onion, grated cheese, and chopped cilantro until well combined.

Make Enchilada Sauce

  1. 2

    Prepare Sauce

In a saucepan, heat olive oil over medium heat. Add chili powder, ground cumin, and garlic powder, stirring for about 1 minute until fragrant.

  2. 3

    Add Liquids

Stir in the tomato sauce and chicken broth. Season with salt and black pepper. Simmer for 10 minutes, stirring occasionally.

Assemble Enchiladas

  1. 4

    Prepare Tortillas

Warm the corn tortillas in a skillet or microwave to make them pliable. This will prevent them from breaking when filled.

  2. 5

    Fill Tortillas

Take one tortilla, add a generous spoonful of the filling mixture, and roll tightly. Place the rolled tortilla seam side down in a greased baking dish.

  3. 6

    Repeat

Continue filling and rolling the tortillas until all the filling is used.

  4. 7

    Top with Sauce

Pour the prepared enchilada sauce evenly over the filled tortillas in the baking dish.

  5. 8

    Add Cheese

Sprinkle any remaining grated cheese on top of the sauce.

Bake Enchiladas

  1. 9

    Preheat Oven

Preheat the oven to 375°F (190°C).

  2. 10

    Bake

Cover the baking dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Serve

  1. 11

    Garnish and Serve

Remove from the oven and let cool for a few minutes. Serve topped with sour cream and sliced jalapeños.
