Prep the Tortillas
Cut each corn tortilla into 6 triangle-shaped pieces to create chips.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add a handful of tortilla triangles to the hot oil. Fry for about 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove the chips from the oil.

Drain and Season
Place the fried chips on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.

Mix the Salsa
In a mixing bowl, combine the diced tomatoes, red onion, jalapeño, and chopped cilantro.

Season the Salsa
Squeeze the juice of the lime over the mixture and add salt. Stir well to combine all ingredients.

Let the salsa sit for at least 15 minutes to allow the flavors to meld together before serving.
