Prepare the Dough

Boil the Ingredients
In a medium saucepan, combine the water, unsalted butter, sugar, and salt. Bring to a boil over medium heat.

Add Flour
Once boiling, remove the saucepan from heat and add the all-purpose flour. Stir vigorously with a wooden spoon until the mixture forms a ball.

Incorporate Eggs
Let the mixture cool slightly, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.
Prepare the Cinnamon Sugar

Mix Sugar and Cinnamon
In a small bowl, mix together the sugar and ground cinnamon until well combined. Set aside.
Fry the Churros

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe the Churros
Transfer the dough to a piping bag fitted with a large star tip. Carefully pipe strips of dough (about 4-6 inches long) into the hot oil.

Fry the churros for about 2-3 minutes on each side, or until they are golden brown. Use tongs to remove them from the oil and drain on paper towels.
