    Prepare the Ingredients

    Begin by rinsing the tomatillos under cold water and removing the husks. Chop the green bell pepper, jalapeño peppers (removing seeds if less heat is desired), onion, and garlic into small pieces.

    Cut the Pork

    Cut the pork shoulder into 2-inch cubes and season generously with salt, black pepper, cumin, and oregano.

Cooking

    Sear the Pork

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned pork cubes and sear them on all sides until browned, about 5-7 minutes.

    Sauté Vegetables

    Remove the browned pork from the pot and set aside. In the same pot, add the chopped onion, green bell pepper, jalapeño peppers, and garlic. Sauté until softened, about 5 minutes.

    Add Tomatillos

    Add the chopped tomatillos to the pot and stir for another 3-4 minutes until they are slightly softened.

    Combine Ingredients

    Return the seared pork to the pot and pour in the chicken broth. Stir well to combine all ingredients.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the pork is tender and easily shreds with a fork.

Serving

    Shred and Serve

    Once cooked, remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot and stir to combine with the sauce. Serve hot with your choice of side.
