For the Chile Verde Sauce

    Prepare the Pork

    Cut the pork shoulder into large chunks and season with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the pork chunks until browned on all sides.

    Blend the Sauce

    In a blender, combine green tomatillos, jalapeños, garlic, onion, cilantro, lime juice, and a pinch of salt. Blend until smooth.

    Slow Cook the Pork

    Transfer the seared pork into a slow cooker and pour the blended sauce over the top. Cook on low for 6-8 hours, or until the pork is tender and easily shredded.

    Shred the Pork

    Once cooked, shred the pork using two forks and mix it with the sauce in the slow cooker.

For the Burrito Assembly

    Warm the Tortillas

    Heat the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

    Spread Refried Beans

    On each tortilla, spread about 1/2 cup of refried beans evenly across the center.

    Add Chile Verde Pork

    Spoon a generous portion of the shredded pork with sauce over the refried beans.

    Top with Cheese and Sour Cream

    Sprinkle shredded cheddar cheese over the pork and add a dollop of sour cream.

    Roll the Burrito

    Fold in the sides of the tortilla and then roll it up tightly from the bottom to enclose the filling.

    Cut the burrito in half if desired and serve warm, with extra sour cream or salsa on the side.
