Method

Preparation of Peppers

    Roast the Peppers

    Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast them in the oven for about 20-25 minutes, turning occasionally, until the skin is blistered and charred.

    Peel the Peppers

    Once roasted, remove the peppers from the oven and place them in a bowl covered with plastic wrap for about 10 minutes. This will help steam the skins off. After steaming, peel off the charred skin carefully.

    Prepare the Peppers for Filling

    Make a slit down one side of each pepper and remove the seeds carefully. Set aside.

    In a mixing bowl, combine the shredded cheese, chopped cilantro, and cumin. Mix well to combine.

    Stuff the Peppers

    Take each prepared poblano pepper and stuff it with the cheese filling. Make sure to pack it well but not too tightly.

    In another bowl, separate the egg whites from the yolks. Beat the egg whites until they form stiff peaks. In a separate bowl, whisk together the egg yolks, flour, baking powder, salt, and pepper.

Cooking

    In a large skillet, heat about 1 cup of oil over medium heat until hot.

    Dip each stuffed pepper into the batter, allowing excess to drip off. Carefully place the peppers in the hot oil. Fry until golden brown on all sides, about 5-7 minutes. Remove and drain on paper towels.
