Preparation of Peppers
- 1
Roast the Peppers
Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast them in the oven for about 20-25 minutes, turning occasionally, until the skin is blistered and charred.
- 2
Peel the Peppers
Once roasted, remove the peppers from the oven and place them in a bowl covered with plastic wrap for about 10 minutes. This will help steam the skins off. After steaming, peel off the charred skin carefully.
- 3
Prepare the Peppers for Filling
Make a slit down one side of each pepper and remove the seeds carefully. Set aside.
Cheese Filling
- 4
Make the Filling
In a mixing bowl, combine the shredded cheese, chopped cilantro, and cumin. Mix well to combine.
- 5
Stuff the Peppers
Take each prepared poblano pepper and stuff it with the cheese filling. Make sure to pack it well but not too tightly.

Prepare the Sauce
In a saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add canned tomatoes, chili powder, and oregano, and simmer for about 10 minutes.
