Method

Preparation

  1. 1

    Prep the Ingredients

Dice the jalapeños, chop the onion, and mince the garlic. Set aside.

  2. 2

    Grate the Cheeses

Grate the Queso Blanco and Monterey Jack cheeses, and cut the cream cheese into small cubes for easy melting.

Cooking

  1. 3

    Sauté Vegetables

In a medium saucepan over medium heat, add a splash of oil and sauté the chopped onion for 3-4 minutes until translucent. Add minced garlic and diced jalapeños, and cook for another 2 minutes.

  2. 4

    Add Seasonings

Stir in cumin powder, chili powder, salt, and black pepper into the sautéed vegetables. Mix well and cook for 1 minute to toast the spices.

  3. 5

    Add Liquids

Pour in the milk and chicken broth, stirring to combine. Bring the mixture to a simmer.

  4. 6

    Add the Cheeses

Gradually add the grated Queso Blanco, Monterey Jack, and cubed cream cheese to the simmering mixture. Stir continuously until all the cheese has melted and the sauce is smooth.

Serving

  1. 7

    Serve the Dish

Once the cheese sauce is smooth and creamy, remove from heat. Transfer to a serving bowl and garnish with chopped cilantro, sour cream, and diced tomatoes if desired.
