Prepare the Chicken
Slice the boneless, skinless chicken breasts into thin strips, about 1/2 inch wide. Season with garlic powder, cumin, chili powder, salt, and black pepper.

Slice the Vegetables
Slice the bell peppers and onion into thin strips. You can use a mix of green, red, and yellow bell peppers for color and flavor.

Cook the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken strips to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onions. Sauté until they are tender and slightly caramelized, about 5-6 minutes.

Combine Chicken and Vegetables
Return the cooked chicken to the skillet with the sautéed vegetables. Stir to combine and heat through for an additional 2-3 minutes.

Warm the Tortillas
While the chicken and vegetables are cooking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are pliable.
