Chicken Fajita Burrito Recipe

Method

Marinating the Chicken

    Prepare the Marinade

    In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper.

    Marinate the Chicken

    Place the chicken breasts in a resealable plastic bag or bowl. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes.

Cooking the Chicken

    Grill the Chicken

    Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side or until fully cooked (internal temperature of 165°F).

    Slice the Chicken

    Once cooked, remove the chicken from the grill and let it rest for a few minutes. Then slice it into thin strips.

Assembling the Burritos

    Sauté the Onions

    In a skillet over medium heat, add a little olive oil and sauté the sliced onion until soft and translucent, about 5 minutes.

    Fill the Tortillas

    Lay a flour tortilla flat. Add a portion of grilled chicken, sautéed onions, shredded Swiss cheese, and a dollop of sour cream.

    Wrap the Burrito

    Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top to enclose the filling.

    Serve the burritos warm with a side of fresh guacamole and pico de gallo.
