Preparing the Filling

Mix the Filling Ingredients
In a large mixing bowl, combine the cooked shredded chicken, cream cheese, shredded cheddar cheese, cumin, garlic powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Prepare the Tortillas
Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until warm and pliable. This will make them easier to roll.
Assembling the Enchiladas

Fill the Tortillas
Take a warm tortilla and place about 1/4 cup of the chicken filling in the center. Roll the tortilla tightly around the filling and place seam-side down in a greased baking dish. Repeat this process for all tortillas.

Top with Sauce
Pour the green sauce mixture evenly over the rolled enchiladas in the baking dish.

Bake
Cover the baking dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 20 minutes. Remove the foil and bake for an additional 10 minutes until the edges are bubbling and the cheese is melted.

Once baked, remove from the oven and let cool for a few minutes. Serve enchiladas topped with sour cream and sliced green onions.
