Preparation

Preheat Oven
Preheat your oven to 350°F (175°C).

Prepare Tortillas
Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side to make them pliable.
Filling Enchiladas

Fill Tortillas
Place about 1/3 cup of shredded cheese in the center of each warmed tortilla.

Roll Enchiladas
Fold the sides of the tortilla over the cheese and roll it up tightly. Place the filled enchiladas seam side down in a greased baking dish.
Adding Sauce and Cheese

Pour Sauce
Pour the mild red enchilada sauce evenly over the rolled enchiladas in the baking dish.

Add Cheese
Sprinkle the additional shredded cheese on top of the enchiladas.
Baking

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Serving

Garnish
Remove from the oven and let cool for a few minutes. Top with chopped fresh cilantro before serving.
