For the Chalupa Shells

Method

For the Chalupa Shells

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, and salt. Mix well.

  2. 2

    Form the Dough

Add warm water and vegetable oil to the dry ingredients. Stir until a dough forms. Knead on a floured surface for about 5 minutes until smooth.

  3. 3

    Rest the Dough

Cover the dough with a damp cloth and let it rest for 30 minutes.

  4. 4

    Shape the Shells

Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it into a round disc about ¼ inch thick.

  5. 5

    Fry the Shells

In a large skillet, heat vegetable oil over medium heat. Fry each disc for 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

For the Filling

  1. 6

    Cook the Meat

In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.

  2. 7

    Add Seasoning

Add taco seasoning to the browned meat. Stir in ½ cup of water and simmer for about 5 minutes until the sauce thickens.

  3. 8

    Assemble the Chalupa

Spread a layer of refried beans on each chalupa shell. Top with the seasoned meat, shredded lettuce, diced tomatoes, shredded cheese, sour cream, and sliced jalapeños.
