Pork Carnitas

Prepare the Pork
In a large bowl, season the pork shoulder with salt, black pepper, cumin, and oregano. Rub the spices into the meat thoroughly.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add whole garlic cloves, chopped onion, orange juice, lime juice, and bay leaves. Set the slow cooker to low and cook for 8 hours, or until the pork is tender and easily shredded.

Shred the Pork
Remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and bay leaves. Return the shredded pork to the slow cooker and keep warm.

Prepare the Tortillas
Warm the flour and corn tortillas in a skillet over medium heat for about 30 seconds on each side, until soft and pliable.

Assemble the Tacos
Place a generous portion of the shredded carnitas in the center of each tortilla. Top with diced onion and chopped cilantro. Serve with lime wedges on the side.

Prepare the Hot Sauce
In a blender, combine tomatillos, jalapeño, garlic cloves, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning with additional salt, if necessary.
