Prepare the Carnitas

Season the Pork
In a large bowl, mix together the salt, ground cumin, chili powder, garlic powder, onion powder, and black pepper. Rub this spice mixture all over the pork shoulder to coat evenly.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add the bay leaves, orange juice, lime juice, and water. Cover and cook on low for 8-10 hours, or until the pork is tender and easily shredded.

Shred the Meat
Once cooked, carefully remove the pork shoulder from the slow cooker. Let it cool slightly, then shred the meat with two forks, discarding any large pieces of fat. Mix the shredded meat with the juices from the slow cooker.

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, or until pliable and slightly toasted.

In serving bowls, arrange chopped onion, chopped cilantro, diced tomatoes, sliced jalapeños, sour cream, shredded cheese, and sliced avocado.
