Cooking the Carnitas

Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a large bowl, mix together the salt, black pepper, cumin, garlic powder, and onion powder. Rub the spice mixture all over the pork pieces.

Cook the Pork
In a slow cooker, add the seasoned pork, bay leaves, orange juice, lime juice, and water. Cover and cook on low for 8 hours or on high for 4 hours, until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Set aside.

Prepare the Vegetables
Slice the green bell pepper, red bell pepper, and yellow onion into thin strips.

Sauté the Vegetables
In a large skillet over medium-high heat, add a drizzle of oil. Once hot, add the sliced vegetables and sauté until they are tender and slightly charred, about 5-7 minutes. Remove from heat.

Serve
Serve the carnitas and vegetable mixture on warm corn tortillas. Top with guacamole, sour cream, shredded jack cheese, and pico de gallo.
