    In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Sprinkle the all-purpose flour over the sautéed vegetables and stir well to coat. Cook for an additional 2-3 minutes, allowing the flour to cook and thicken slightly.

    Gradually pour in the chicken or vegetable broth, stirring continuously to avoid lumps. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.

Cheese and Seasoning

    Reduce the heat to low. Stir in the shredded sharp cheddar cheese and softened cream cheese until completely melted and smooth. Gradually mix in the beer, followed by the mustard powder, paprika, salt, and black pepper to taste. Stir well to combine.
