Preparation and Cooking Instructions

    Prepare the Boudin

    Grill the boudin sausage over medium heat for about 10-15 minutes, turning occasionally until fully cooked and slightly crispy on the outside. Let it cool slightly before slicing.

    Assemble the Quesadillas

    In a mixing bowl, combine the sliced boudin, shredded mozzarella cheese, and chopped green onions. Mix well.

    Cook the Quesadillas

    Heat a skillet over medium heat and add a tablespoon of olive oil. Place one tortilla in the skillet, add a portion of the boudin mixture, and top with another tortilla. Cook for 3-4 minutes until golden brown, then flip and cook the other side for another 3-4 minutes. Repeat for remaining tortillas and filling.

    Serve

    Cut the quesadillas into wedges and serve hot with guacamole, pico de gallo, and jalapeno ranch on the side.
