Prepare the Shrimp
Heat the cooking oil in a deep fryer or a large pot over medium-high heat. Once hot, add the popcorn shrimp in batches and fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
Toast the Rolls
While the shrimp are frying, slice the French rolls in half and toast them in the oven or on a skillet until golden brown.
Assemble the Po' Boys
Spread a generous amount of tartar sauce on the bottom half of each toasted roll. Layer with shredded lettuce, followed by sliced tomatoes, and finally add a handful of the crispy popcorn shrimp on top.
Finish and Serve
Top with the other half of the roll and serve immediately with extra tartar sauce on the side, if desired.
