Prepare the Fish
In a bowl, combine flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. In another bowl, whisk together egg and milk.
Coat the Fish
Dip each fish fillet into the egg mixture, allowing excess to drip off, then dredge in the flour mixture until well coated.
Fry the Fish
In a large skillet or deep fryer, heat vegetable oil over medium-high heat. Fry the fish fillets for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
Toast the Rolls
While the fish is frying, slice the French rolls and lightly toast them in the oven or on a skillet.
Assemble the Po' Boys
Spread tartar sauce on the inside of each toasted roll. Place a few pieces of crispy fish inside, top with lettuce and tomato slices. Close the sandwich.
Serve
Serve immediately while hot and crispy.
