    Prepare the Alligator Bites

    In a large bowl, soak the cubed alligator meat in buttermilk for at least 1 hour in the refrigerator.

    Mix the Dry Ingredients

    In another bowl, mix together the cornmeal, flour, Cajun seasoning, salt, and black pepper.

    Heat the Oil

    In a deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Alligator

    Remove the alligator meat from the buttermilk, allowing excess to drip off. Dredge the pieces in the cornmeal mixture until evenly coated.

    Fry the Alligator Bites

    Carefully place the coated alligator pieces into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and cooked through.

    Drain and Serve

    Remove the fried alligator bites and let them drain on a paper towel. Serve immediately with zesty dipping sauce.
