Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onions and bell peppers and sauté for about 5-7 minutes until the onions are translucent and the peppers are tender.

Add the Ham and Tomatoes
Stir in the diced ham and tomatoes. Cook for an additional 5 minutes until the ham is heated through and the tomatoes have softened.

Season the Mixture
Sprinkle in the salt, black pepper, garlic powder, and paprika. Mix well to combine all the flavors.

Add the Cheese
Remove the skillet from heat and stir in the shredded cheddar jack cheese until melted and evenly distributed.

Serve the mixture warm, either on its own or with bread or tortillas.
