Preparation

    Marinate the Protein

    In a bowl, combine ponzu sauce, grated ginger, minced garlic, and sesame oil. Add the Angus steak tips or chicken breast and marinate for at least 1 hour, preferably overnight in the refrigerator.

    Prepare Mango Salsa

    In a separate bowl, mix diced mango, red onion, cilantro, minced jalapeño, and lime juice. Season with salt to taste and set aside to let the flavors meld.

    Cook the Potatoes

    In a large pot, add quartered potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

    Grill the Protein

    Preheat the grill to medium-high heat. Remove the protein from the marinade and grill for about 5-7 minutes per side or until cooked to your desired doneness.

    Plate and Serve

    Serve the grilled protein with a generous scoop of mango salsa on top, alongside mashed potatoes and Chef’s vegetable of the day.
