    Prepare the Prime Rib

    Preheat your oven to 450°F (232°C). Season the prime rib roast generously with salt, black pepper, garlic powder, and onion powder. Place it on a roasting rack in a roasting pan.

    Roast the Meat

    Roast the prime rib in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C). Continue roasting for approximately 15-20 minutes per pound for medium rare, or until the internal temperature reaches 130°F (54°C). Remove from oven and let rest for at least 20 minutes before slicing.

    Prepare the Au Jus

    In a saucepan, heat the beef broth over medium heat. Scrape up any brown bits from the roasting pan and add them to the broth for flavor. Let it simmer for about 15 minutes. Adjust seasoning with salt and pepper as needed.

    Slice the Prime Rib

    Using a sharp knife, thinly slice the prime rib against the grain.

    Assemble the Sandwiches

    Slice the French rolls in half and layer with slices of prime rib and provolone cheese. If desired, add horseradish sauce for an extra kick.
