    Prepare the Vegetables

    Chop the bell peppers and onion into small, even pieces.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped bell peppers and onion. Sauté until softened, about 5-7 minutes.

    Add the Prime Rib

    Add the shaved prime rib to the skillet with the vegetables. Cook until the meat is heated through, about 3-4 minutes. Season with salt and black pepper.

    Prepare the Eggs

    In a bowl, crack the eggs and whisk until well combined. Season with a pinch of salt and pepper.

    Cook the Omelet

    In a separate non-stick skillet, heat the remaining tablespoon of olive oil over medium-low heat. Pour in the eggs and let them cook undisturbed for about 2-3 minutes until the edges start to set.

    Add Filling and Cheese

    Once the edges are set, add the sautéed prime rib and vegetable mixture onto one half of the omelet. Top with cheese.

    Carefully fold the other half of the omelet over the filling. Cook for an additional 2-3 minutes until the cheese melts and the omelet is cooked through.
