    Prepare the Prime Rib

    Preheat your oven to 300°F (150°C). Season the prime rib with salt and pepper. Place it in a roasting pan and roast for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness.

    Sauté the Vegetables

    While the prime rib is roasting, heat a skillet over medium heat. Add a little oil and sauté the mushrooms, onions, and bell peppers until they are soft and caramelized, about 5-7 minutes.

    Prepare Boursin Spread

    In a bowl, mix the Boursin cheese with a splash of beer until smooth. Adjust the consistency as needed.

    Assemble the Bomb

    Once the prime rib is done, let it rest for 10 minutes before slicing it thinly. Spread a layer of the Boursin mixture on the bottom of a serving platter, then layer the sliced prime rib, sautéed vegetables, and top with a blend of cheddar and Monterey Jack cheeses.
