Chicken Marinade

Method

Preparation and Assembly

  1. 1

    Marinate the Chicken

In a bowl, mix the jerk seasoning, olive oil, minced garlic, and lime juice. Coat the chicken thighs in the marinade, cover, and refrigerate for at least 1 hour or overnight for best results.

  2. 2

    Grill the Chicken

Preheat the grill to medium-high heat. Remove chicken from the marinade and grill for about 6-7 minutes on each side, or until cooked through and juices run clear. Remove from heat and let rest for 5 minutes.

  3. 3

    Chop the Chicken

Once rested, chop the grilled chicken thighs into bite-sized pieces.

  4. 4

    Prepare the Roti

Warm the roti on a skillet or grill for about 1 minute on each side until soft and pliable.

  5. 5

    Assemble the Dish

On each warm roti, layer chopped jerk chicken, shredded lettuce, sliced tomato, raw red onion, sweet pickles, and drizzle with Osaka Sauce. Roll or fold the roti and serve immediately.
